SWEET CORN SOUP



SWEET CORN SOUP:                        
                                                                               



Ingedients:

1 1/4 cups boiles sweet corn kernels 
1/4 cup boiled and crushes sweet corn kernels 
1 cup finely chopped and boiled mixed vegetables (carrots,cauliflower and french beans)
4 tbsp cornflour
1 tbspbutter
1 1/2 tsp finely chopped garlic 
1 1/2 tsp finely chopped ginger
salt  to taste

Method


  1. Combine the cornflour and ¼ cup of water in a small bowl and mix well till the cornflour dissolves completely. Keep aside.
  2. Heat the butter in a deep non-stick pan, add the ginger and garlic and sauté on a medium flame for a few seconds.
  3. Add the sweet corn, crushed sweet corn and mixed vegetables, mix well and cook on a medium flame for 1 more minute, while stirring continuously.
  4. Add 4 cups of water, cornflour-water mixture, salt and pepper, mix well and cook on a medium flame for another 4 to 5 minutes, while stirring occasionally.
  5. Serve immediately with chillies in vinegar.

VEGETABLE SOUP


                                                                                   


VEGETABLE SOUP



  • 2 medium carrots sliced
  • 1 medium potato diced
  • 100 grams doodhi/lauki diced
  • 4 medium tomatoes quartered
  • 1 tsp oil
  • ½ tsp cumin seeds
  • 8 black peppercorns
  • 1 medium onion thickly sliced
  • Salt to taste
  • ½ tsp sugar
  Method
  • Heat oil in a pan, add cumin seeds, black peppercorns and onion sauté
  • Add carrots, potato, bottle gourd and stir. Add salt and mix
  • Add two cups of water cover and cook for ten minutes
  • Add tomatoes and continue to cook covered till all the vegetables are completely cooked
  • Strain and reserve the liquid. Cool the vegetables and then puree in a blender
  • Transfer into a deep pan, add the reserved liquid and adjust consistency (should be thick)
  • Bring the soup to boil, add salt sugar and salt stir
  • Serve hot with fresh cream.

SPINACH SOUP

                                                                             
                                                                             

 
Ingredients

3 cups chopped spinach (palak)
1 tbsp roughly chopped garlic (lehsun)
1 tsp oil
1/2 cup finely chopped onions
1 tsp cornflour dissolved in 1/2 cup low-fat milk
salt and freshly ground pepper (kalimirch) to taste

For Serving
toasted whole wheat bread

Method
  1. Heat the oil in a non-stick pan, add the onions and garlic and sauté on a medium flame for 1 to 2 minutes.
  2. Add the spinach and cook on a medium flame for 2 minutes.
  3. Add 1 cup of cold water and purée the mixture in a blender to a coarse texture.
  4. Pour the purée back to the pan, add the cornflour-milk mixture, salt and pepper and bring to a boil.
  5. Serve hot with toasted whole wheat bread.











CARROT SOUP


CARROT SOUP


 2 tablespoons unsalted butter or extra-virgin coconut oil     
 1 onion, chopped
 scant 1 tablespoon red curry paste, or to taste
2 pounds carrots, peeled and chopped - 1/2-inch chunks
1 14-ounce can full-fat coconut milk
1 1/2 teaspoons sea salt, or to taste
1 1/2 cups / 360 ml of water, or to cover
1 lemon or lime



In a large soup pan over medium-high heat add the butter and onion. Stir until the onions are well-coated, and allow to saute until translucent, a few minutes. Stir in the curry paste, and then the carrots. Allow to cook another minute or two, and then add the coconut milk, salt, and water, adding more water to cover if needed. Allow to simmer until the carrots are tender, 10 - 15 minutes, and then puree using a blender or hand blender until the soup is completely silky smooth. This next part is important (with any soup) - make any needed adjustments. Add more water if the consistency needs to be thinned out a bit. After that taste for salt, adding more if needed. I also like to season this soup with a great big squeeze or lemon or lime juice. Serve topped with whatever you have on hand - I like it with a little something crunchy (almonds), and a lot of something green (micro greens & cilantro).
If you want you can add 2 nos tomato along with carrot. It gives you different taste.

TOMATO SOUP





Tomato soup                                                            
Ingredients4 cups finely chopped riped tomatoes1 bay leaf  (tejpatta)3 whole peppercorns (kalimirch)1 1/2 tbsp butter1 tbsp corn flour1/4 cup tomato puree2 tsp sugarsalt and to taste1 1/2 tbsp fresh cream
FOR THE GARNISH2 tsp fresh cream1/4 cup bread croutonsMethod
Combine the tomatoes with 1 cup of water in a kadhai, add the bayleaf, peppercorns and cook on a medium flame for 8 to 10 minutes, while stirring occasionally.
Remove the bayleaf and discard it and allow to cool completely.
Blend in a mixer to a smooth purée.
Strain the purée and keep aside.
Heat the butter in a kadhai, add the plain flour and sauté on medium flame for 1 minute.
Add the prepared tomato mixture, 1 cup of water, tomato purée, mix well and cook for 1 minute.
Add the sugar, salt, pepper powder and fresh cream, mix well and cook on a medium flame for 2 minutes.
Serve hot garnished with fresh cream and bread croutons.
